I love a dish where all the flavors blend together, bringing a party to your taste buds. This is one of those dishes, you don’t question any of the flavors, you just enjoy every bite. I love to bake this on lazy weekend mornings to enjoy with a steaming cup of coffee. Sometimes breakfast, sometimes dinner, sometimes just whatever is leftover (see chef’s notes).


1¼ cups all-purpose flour
1 teaspoon sugar
¼ teaspoon fine salt
½ cup (1 stick) cold salted butter, cut into 1 table spoon pieces
4 tablespoons ice water
8 oz. fresh slices mushrooms (chop them up a little finer, about ¼”-½” in size)
4 garlic cloves minced
1 (10 oz.) box frozen spinach (thawed out)
4 large eggs
1 cup milk
½ cup goat cheese
¼ cup grated parmesan
½ cup shredded mozzarella
salt & pepper to taste
