Vegan Irish food lovers rejoice! I here present you to the ultimate Vegan Irish Stew. It is healthy and delicious, quick and easy to prepare.

250 gr seitan (aka wheat gluten)
4 medium potatoes
5 medium carrots
3 medium onions (if you don’t like onion that much, use just one)
Fresh thyme (Dry can be used, but the flavour will be different)
1 tsp sugar
3 tbsp balsamic vinegar
100 ml red wine
1 tbsp vegetable oil
Salt, pepper

Chop the onion and fry with the oil (if you are not vegan, you can use butter).
Add the sugar and stir, then add the vinegar.
Cook for 30 seconds.
Add the seitan cut into small squares.
Add the wine and let it simmer for a couple of minutes. Add around 2 liters of water.
Peel the carrots and potatoes. Cut in chunks (bigger than the seitan).
