Exciting Mini Egg Muffins!

So you are sick of the fruit, or the porridge or wholemeal toast! Well here is a tasty breakfast that will hit the spot! It would even work as a lunch with salad or a snack!

It’s so light, fluffy and of course healthy!

Here is the recipe for the Egg Muffins

(Makes 6 little bun cases)

  • 4 eggs
  • Chopped red or white onion
  • Ham
  • Few chopped baby tomatoes
  • Some grated cheese
  • Thyme (sprinkle of it)
  • Dash of salt an pepper

Mix all these ingredients together then pour into the 6 little bun cases, bake for 15-20 mins!
